Olives an excellent source of monounsaturated fatty acids, provide fiber, minerals and contain an excellent source of vitamin E, the natural antioxidant factor. Olives are great appetizers and to cook with use in many dishes. They are considered one of the healthiest food products and a quick source of calcium, vitamins and other nutrients.

Today using many methods olives can be cured or pickled before consumption, including oil-cured, water-cured, brine-cured, dry-cured, and lye-cured
