Greek ouzo

The world famous Greek aperitif, Ouzo, a strong alcoholic beverage native to Greece that is distilled from the remnants of the crushed grapes that have been pressed for wine,distilled alcohol, water and aromatic ingredients, with aniseed prevailing. Traditionally, this drink that is 40% alcohol is served straight (without ice) or mixed with water which turns milky white. Known for its distinctive licorice flavor and its potency, ouzo is served as a chilled drink and used in many food recipes adding a surprising freshness that enhances rather than overwhelms.

If recipes call for fennel or fennel seed, use ouzo, sauté onions with ouzo and add it to your vinaigrette dressings and you can use it to flambé dishes.
